It's Apple Season - Three Of My Favorite Apple Recipes

Today, my daughter and I took Jacinda apple picking.No bottom picking for her....right up that ladder!  My favorite apples are Honey Crisp, and they are finally ready for picking!As soon as I got home I couldn't wait to bake a pie.I've never understood why most apple pie recipes use so much sugar.Most recipes use a full cup of sugar.I prefer enjoying the flavor of the apples, and I only use 1 tablespoon in my recipe. Neena's Not So Sickly Sweet Apple PieIngredients:Pie crust of choice6 medium/large apples, peeled and sliced 1 Tbsp sugar2 teaspoons cinnamon2 Tbsp butter Set bottom crust in pie plate.  I don't make my own crust.  I use Trader Joe's frozen rolled-up crust.  (it's like Pillsbury)My apples of choice are Honeycrisp or Cortland....use whatever you like. Mix apples, sugar, and cinnamon together and place on top of crust.Cut butter into 6 pieces and place on top of apples.  Cover filling with top crust.  Pinch top crust and bottom crust edges together.  Cut 4 slits in top of crust to vent steam.Bake at 400° for 15 minutes.  Reduce heat to 375° and cover edges of crust with pie crust shield or aluminium foil.  Bake an additional 45 minutes or until crust is golden brown.Since it's apple picking time in New England, here are two more of my favorite recipes.... Apple MuffinsI love this recipe from Love & Lemons. I revised the recipe just a bit....I use raisins instead of walnuts.I only use half the sugar.I reduce the oil to 1 Tbsp and add 1/4 cup of applesauce. Apple Muffins Recipe  (Love & Lemons)    Apple SharlotkaThis cake,  mostly apples, is so good! The flavor of the cake part reminds me of angel food cake.It's very impressive looking, considering how easy it is to make. I like that it's different, and most people have not had it before. It's quick to throw together, and really delicious with your favorite vanilla ice cream.  The only problem is you may find yourself wanting more!
