When you prepare potatoes do you throw away the skin? My husband has always eaten the skin when we have baked potatoes. Fairly common. When we peel potatoes, however, we toss the peels....as most people do. Recently, while I was peeling, my husband asked me not to throw them away. Instead he wanted to try baking them. Two things came to mind...he is crazythat is disgusting He rinsed them, patted them dry with paper towel, tossed in olive oil and spread them in a single layer on a baking sheet. Lightly salted with Kosher Salt and baked at 375° until crispy.

Absolutely delicious!Whether you use a peeler and they are very thin with little potato on them or peel with a knife and leave some potato on them....absolutely delicious. The Good: Potato skins are rich in fiber and mineral content: iron, potassium and niacin (vitamin B-3). The Bad: Thirty five different pesticides have been found on conventional potatoes. They are treated with chemicals during growing season, Treated again before harvesting,Treated, yet again, after they are dug up. I only buy Organic potatoes. More information on why I do.
